 Zucchini Cottage Cheese Bread


🛒 Ingredients (9 × 5 in / 23 × 13 cm loaf; about 8 slices):


• 2 medium zucchini, grated (about 200 g)


• 1 teaspoon salt (5 mL)


• 3 large eggs


• 1/2 cup cottage cheese (120 g)


• 1 cup shredded cheddar cheese (120 g)


• 1/2 cup grated Parmesan cheese (50 g)


• 1 cup almond flour (96 g)


• 1 teaspoon baking powder (5 mL)


• 1/2 teaspoon garlic powder (2.5 mL)


• 1/2 teaspoon black pepper (2.5 mL)


• 2 teaspoons olive oil (10 mL)


👩‍🍳 Directions:


1️⃣ Preheat the oven to 350°F (180°C) and lightly grease a 9 × 5-inch (23 × 13 cm) loaf pan.


2️⃣ Prepare the zucchini by grating it and placing it in a bowl with the salt.


3️⃣ Let sit for 10 minutes, then squeeze out excess moisture using a clean towel.


4️⃣ In a large bowl, whisk the eggs until smooth. Add the cottage cheese and olive oil, mixing until well combined.


5️⃣ Stir in the squeezed zucchini, shredded cheddar, and Parmesan cheese.


6️⃣ Fold in the almond flour, baking powder, garlic powder, and black pepper.


7️⃣ Mix until all ingredients form a thick batter.


8️⃣ Transfer the batter into the prepared loaf pan and spread evenly.


9️⃣ Bake for 40–45 minutes, or until the top turns golden and the center is set.
