Soft Load Bread

 SOFT LOAF 🍞✨


Ingredients:


3 cups all-purpose flour

2 1/4 teaspoons active dry yeast (1 packet)

2 tablespoons sugar

1 teaspoon salt

1 cup warm water (110°F/45°C)

1/4 cup unsalted butter, softened

1/4 cup milk

1 egg

Instructions:


In a small bowl, dissolve the yeast and sugar in the warm water. Let it sit for about 5-10 minutes, until the mixture becomes foamy.

In a large mixing bowl, combine the flour and salt.

Add the softened butter, milk, egg, and yeast mixture to the flour. Mix until a soft dough forms.

Knead the dough on a floured surface for 6-8 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough, shape it into a loaf, and place it in a greased 9x5-inch loaf pan.

Cover the pan and let the dough rise for another 30-40 minutes, or until it rises above the edges of the pan.

Preheat the oven to 350°F (175°C). Bake the loaf for 30-35 minutes, or until golden brown and hollow-sounding when tapped.

Remove from the oven and let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Canning Pineapple Jalapeño

Ingredients: • 
3 cups of diced fresh pineapple •
1 cup of thinly sliced jalapeño peppers •
1 cup of apple cider vinegar •
2 cups of granulated sugar 
2 tablespoons of lemon juice •
1 teaspoon of mustard seeds •
1/2 teaspoon of turmeric powder •
1 tablespoon of grated ginger • 
2 cloves of finely chopped garlic 

Instructions: 
1. Get a big saucepan and toss in the apple cider vinegar, granulated sugar, lemon juice, mustard seeds, turmeric powder, grated ginger, and chopped garlic. Let it come to a nice boil, then turn down the heat and let it simmer until the sugar's all melted in. 2. Now, toss in the diced pineapple and those jalapeño slices into the saucepan. Let everything simmer away over a medium flame until the pineapple's soft and the liquid's turned all syrupy. It'll take about 20 minutes or so. 
3. While that's cooking, get your jars and lids sterilized by dunking them in boiling water for at least 5 minutes. 
4. Once your pineapple mix is ready, carefully spoon it into your sterilized jars, making sure to leave a bit of space at the top. Wipe the jar rims clean, pop on the lids, and then give them a nice hot water bath for about 10 minutes. 
5. Once they're out of the bath, let the jars cool down completely. Before you stash them away in a cool, dark spot, double-check those seals.

Zucchini Boats

Ingredients: 
2 medium zucchinis 
1 cup fresh spinach, chopped 
1 cup mushrooms, diced (button or cremini work well) - 
1 cup ricotta cheese 
1/2 cup mozzarella cheese, shredded (plus extra for topping) - 
1/4 cup grated Parmesan cheese 
2 cloves garlic, minced 
1 tablespoon olive oil 
Salt and pepper to taste 
Italian seasoning (optional)

 Instructions: 
1.Preheat the Oven: - Preheat your oven to 375°F (190°C)

2. Prepare the Zucchini: - Cut the zucchinis in half lengthwise   and scoop out the seeds using a spoon to create "boats." Place them cut-side up on a baking sheet 

3. Cook the Filling: - In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. - Add the diced mushrooms and cook until they are soft and any liquid has evaporated, about 5-7 minutes. - Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and Italian seasoning if using. 

4. Mix the Filling: - In a mixing bowl, combine the cooked spinach and mushroom mixture with ricotta cheese, mozzarella cheese, and grated Parmesan cheese. Mix well until all ingredients are combined.

5.Stuff the Zucchini: - Spoon the filling into each zucchini boat, pressing down gently to pack it in. Top with additional mozzarella cheese if desired.

 6. Bake: - Place the stuffed zucchini boats in the preheated oven and bake for about 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

7. Serve: - Remove from the oven and let cool slightly before serving. Enjoy your delicious Spinach, Mushroom, and Ricotta Stuffed Zucchini Boats!

Homemade Condiments



 Homemade Canned Ketchup


Ingredients:

- 12 lbs ripe tomatoes, cored and quartered  

- 2 cups chopped onions  

- 1 1/2 cups apple cider vinegar  

- 1 cup packed brown sugar  

- 1 tablespoon salt  

- 1 teaspoon ground allspice  

- 1 teaspoon cinnamon  

- 1 teaspoon mustard powder  

- 1/2 teaspoon ground cloves  

- 1/2 teaspoon cayenne pepper  


Directions:

1. Prepare the tomatoes: In a large non-reactive pot, combine the quartered tomatoes and chopped onions. Heat over medium heat until it simmers, cooking for about 30 minutes until the tomatoes are soft.  

2. Blend the mixture: Use a blender or food processor to puree the tomato and onion mixture until smooth. Strain the puree through a fine-mesh sieve to remove seeds and skins, pressing down to extract all the liquid.  

3. Cook the ketchup: Pour the strained liquid back into the pot. Add the apple cider vinegar, brown sugar, salt, allspice, cinnamon, mustard powder, cloves, and cayenne pepper. Bring the mixture to a boil, then reduce the heat and let it simmer, stirring occasionally, until it thickens. This should take about 2-3 hours.  

4. Can the ketchup: Ladle the hot ketchup into sterilized jars, leaving about 1/2 inch of headspace at the top. Wipe the rims of the jars clean, place the lids and rings on top, and process the jars in a boiling water bath for 15 minutes.  

5. Cool and store: Carefully remove the jars from the water bath and let them cool completely. Check that the seals are tight, label the jars, and store them in a cool, dark place.  


Prep Time: 30 minutes  

Cooking Time: 3 hours  

Total Time: 3 hours 30 minutes  

Servings: Makes about 6-7 pints of ketchup
