Spinach Quiche

Crustless Spinach, Onion & Feta Quiche Ingredients 1 tbsp olive oil 1 small onion, diced 2 cups fresh spinach (or 1 cup frozen, thawed and drained) 4 large eggs 1 cup milk ½ cup crumbled feta cheese Salt and pepper to taste Preparation Preheat oven to 375°F (190°C). Sauté onion in olive oil until soft. Add spinach and cook until wilted (if using fresh). In a bowl, whisk eggs, milk, salt, and pepper. Stir in spinach mixture and feta. Pour into a greased 9-inch pie dish. Bake for 30–35 minutes, or until set and lightly golden. Let cool slightly before slicing and serving.
